ROASTED GARLIC-HERB WHIPPED GOAT CHEESE
YIELDS: APPROX. 2 CUPS
INGREDIENTS:
1 C Goat Cheese
1 Tbs. Lemon Juice
Small Handful Fresh Parsley Leaves, rough chopped
2 Handfuls Fresh Basil Leaves, rough chopped
Pinch of Salt
1/4 C Heavy Cream
1 Head of Garlic, tops cut off
EVOO
PROCEDURE:
Preheat oven to 350*
Drizzle garlic head with EVOO, wrap in foil. Roast for 45 min. to 1 hour until caramelized.
When garlic is cool, squeeze out into food processor. Add a pinch of salt and the fresh herbs. Pulse to combine. Add the goat cheese, pulse until mixture starts to come together. With the motor running add the lemon juice, followed by the heavy cream. The mixture should be well mixed and "fluffy" in texture. If needed add more heavy cream to get the right consistency. Taste and adjust seasoning.
Bring the cheese to room temperature if not using right away. Serve on crostini, roasted mushroom, grilled chicken or anything that needs a fresh, herby, cheesy kick!
*Add any fresh, soft herbs like cilantro and dill to get different flavor combinations!
