INSTEAD OF THE USUAL SAUTE, VINNY GRILLS THE SHRIMP, TAKING THIS DISH TO THE NEXT LEVEL WHILE ALSO MAKING IT HEALTHIER. GRILLING LENDS A NICE CHAR AND SMOKY FLAVOR TO THE SHRIMP, ADDING MORE DEPTH OF FLAVOR. PAIRED WITH SOME GRILLED CORN AND YOU HAVE YOURSELF AN EASY, DELICIOUS AND HEALTHY MEAL.....
GRILLED SHRIMP SCAMPI
INGREDIENTS:
3 LBS. SHRIMP
EXTRA VIRGIN OLIVE OIL
SALT AND PEPPER
2 Tbs. BUTTER
6 GARLIC CLOVES, chopped
ONE BUNCH OF PARSLEY, chopped
1 CUP OF WHITE WINE
JUICE AND ZEST OF 3 LEMONS
1/2 Tsp. RED PEPPER
SALT AND PEPPER
3 LEMONS, SLICED
PROCEDURE:
Marinate shrimp with olive oil, salt and pepper. Meanwhile, melt butter in a saucepan and saute garlic. Add wine, bring to a simmer and reduce by half. Add lemon zest, juice, parsley, salt and pepper to tase and remove from heat. Thread shrimp onto skewers and grill for 2 minutes on each side or until pink. Transfer to a plate and pour over sauce and add lemon slices. Serve with grilled corn or rice and veggies.
